Carrots

We planted carrots back in September, but I think we should have planted them earlier because they didn't seem to grow very well. They weren't as big as promised by the stated time. We should have had some carrots for Thanksgiving, but didn't have any even for Christmas. So I just left most of them in the ground over the winter. I finally pulled them all up the other day because we were getting the raised beds ready for spring planting.

After cutting the tops off and washing them, there wasn't much carrot left. So I put them in the Nutri-bullet and chopped them all up. I made a nice carrot cake with them.
